    • Ce mémoire explore l'univers des vins effervescents, en mettant l'accent sur leur histoire, leur production, et leur rôle patrimonial. Nous avons abordé l'évolution des vins effervescents, depuis leurs origines jusqu'à leur statut actuel de symbole de luxe, tout en soulignant l'importance du terroir et des traditions dans leur élaboration. Une analyse des chiffres de production en France, en Europe, et dans le Nouveau Monde illustre l'impact global de ces vins. En effet, nous avons approfondi l'étude des Crémants, notamment le Crémant de Loire, en lien avec la région de mon stage. Cette recherche inclut une réflexion sur mon expérience au sein du domaine viticole Clos des Quarterons à Saint-Nicolas-de-Bourgueil. Alors, une partie s'articule autour de mon expérience de stage au sein d'un domaine viticole Clos des Quarterons à Saint-Nicolas-de-Bourgueil. Enfin, nous analysons des préférences des jeunes consommateurs à travers une enquête sociologique afin de montrer les tendances actuelles de consommation des vins effervescents et leur image auprès des nouvelles générations. Ce travail met en lumière l'importance de l'équilibre entre tradition et innovation pour assurer le succès des vins effervescents.
    • This thesis explores the world of sparkling wines, focusing on their history, production, and their role as cultural heritage. We trace the evolution of sparkling wines from their origins to their current status as a symbol of luxury and festivity, highlighting the importance of terroir and tradition in their creation. An analysis of production figures in France, Europe, and the New World illustrates the global impact of these wines. We have also delved into the study of Crémants, particularly Crémant de Loire, in connection with the region of my internship. This research includes a reflection on my experience at the Clos des Quarterons winery in Saint-Nicolas-de-Bourgueil. Additionally, we analyze the preferences of young consumers through a sociological survey to reveal current consumption trends of sparkling wines and their image among the younger generations. This work highlights the importance of balancing tradition and innovation to ensure the success of sparkling wines.
