    • La démarche expérimentale, et plus particulièrement les ateliers expérimentaux physico-chimique sont un concept où l’apprenant est placé au coeur de son apprentissage. Cette démarche est cependant encore peu utilisée dans les enseignements en hôtellerie restauration. Dans cet ouvrage, nous aborderons l’épistémologie du concept, en évoquant la place de cette méthode dans les apprentissages. Nous aborderons également les apports et les obstacles de ce dernier. Ensuite pour notre étude de terrain, nous observerons quels sont les effets sur l’apprentissage, la motivation, la confiance en soi, la mémorisation, et le travail de groupe, de cette forme d’enseignement sur une classe échantillon de seconde baccalauréat professionnel hôtellerie restauration. Nous analyserons ces divers points à l’aide de l’observation de classe, des entretiens semi-directifs, et des évaluations à court, moyen et long terme. Enfin pour terminer cet ouvrage nous vous proposerons un vadémécum sur la mise en place des ateliers expérimentaux physico-chimique en hôtellerie restauration, en présentant les avantage et les limites de ces séances.

    • The experimental process, and more particularly physical chemistry experimental workshops are a concept in which the learner is placed at the heart of their learning process. This approach is still however rarely used within hotel and catering training/instruction. This work will address the/discuss the epistemology of this concept, whilst evoking the method's place within the learning process. We will also discuss the subject of the contributions and the obstacles of the latter. Then, for the field work, we will observe the effects on the learning process, the motivation, the self-confidence, the memorisation and the group work, of this type of teaching on a sample class of first year vocational hotel and catering baccalauréat students. We will analyse these seperate points through the observation of lessons, through semi-guided interviews, and short, middle and long term assessments. Finally, at the end of this work we propose a Vade Mecum (a guidebook) on setting up physical chemistry experimental workshops, whilst presenting the advantages and the limitations of these sessions.
